300g strong bread flour
½ tsp salt
1 packet yeast
25g butter
150-200ml warm water
100g walnuts, chopped
70g dried apricots, chopped
50g dried cranberries
1 camembert (young if possible)
Egg to glaze
1. Preheat oven to 190°
2. Grease and flour a baking sheet
3. Put the flour and salt in a bowl and mix
4. Rub in the butter to resemble fine breadcrumbs
5. Stir in the yeast and then gradually add the water and mix it in with a knife until a soft dough forms
6. Turn the dough out onto a floured surface and knead for 10-15 mins until the dough is soft, smooth and elastic
7. Add in the walnuts, apricots and cranberries, the dough will become a bit sticky now
8. Place the camembert in the middle of the prepared tray in just the paper wrapping (peel away the plastic layer and discard)
9. Then roll the bread dough out into a sausage long enough to wrap around the camembert and seal the two ends together by pinching
10. Lightly cove the wreath with cling film and leave in a warm area of the kitchen to prove
11. Once the dough has doubled in size, glaze it with the egg wash then slash it or cut through to form the ‘leaves’
12. Bake it in the oven for about 30mins until it has cooked through and has a nice golden brown colour and the camembert is very soft and liquid.
13. Carefully transfer to a serving board and serve immediately.
