Some of our Upper Sixth were treated to a virtual wine-tasting course with a professional sommelier in the Cookery School today.
The Leiths Introductory Certificate in Food and Wine provides students with an afternoon to learn about wine. They learn how to prepare their palette for a tasting; by looking at the appearance of a wine, considering the nose and then tasting the wine, noting the sweetness, acidity, alcohol and body.
The students compared two whites, two reds and a sparkling wine, pairing them with different flavours and foods and deciding which wines might better complement different flavours.
As a part of the course, the students also look at the wine-growing process, how different wines are produced and the key regions for viticulture.
