Our Upper Sixth students, who have recently completed their Leiths Introductory Certificate in Food and Wine, were treated to a masterclass with award-winning chef Jude Kereama this afternoon. Jude is best known for his two Porthleven-based restaurants, Kota and Kota Kai, as well as for his appearances on the Great British Menu.
Jude is known for cooking with local, sustainable seafood and local farm produce, with a light Asian twist. Today, he was showing our lucky students how to prepare a range of fresh salmon and sushi dishes.
The first dish was sustainably sourced seared Atlantic teriyaki salmon on a bed of pak choi. This was followed by three different types of sushi (salmon and chicken) and finished with a colourful poke bowl of salmon, avocado and pepper.
The students were given hands-on experience in creating the dishes and were able to sample new and exciting flavours and recipes while chatting to Jude about his career, his passions and their own cheffing ambitions.
A huge thank you to the cookery team for making this afternoon possible and to Jude for such an inspiring and accessible lesson.
